The Stinsons (and our roommates the Kunkles) have been really killing some homemade kettle corn. I'd say we have this an average of 4 times a week. It's just the perfect after dinner snack. Or middle of the day snack. Or your basic wholesome breakfast. Just kidding, I haven't gone that far yet. But a non dairy eating lady really has to get creative on desserts and this has been my go to lately. Here is the recipe for you folks. You won't be sorry.
Ingredients: 1/2 cup of popcorn kernals, 1/3 cup of sugar, 3 to 4 Tbs of some high temp oil. I've been using coconut oil bc it's A)delicious B)healthy and C) it makes your basic popcorn feel a little fancy
Then just follow Pearce's lead and put the oil in and let it get hot (medium high heat) then add the kernels and the sugar at the same time. Give it a little stir to coat all the kernels. Then cover and wait for it to start popping. Once it starts popping shake the pot every few seconds. When the popping slows take it off the heat immediately and uncover, dump it in a big bowl and season it with salt
And then if your like Pearce you'll double fist it.

there is nothing guilty about that pleasure...
I have a really delicious non-dairy scone recipe if you want! I can't have dairy any more either... I can have some cheese, but not much. Such an adjustment!
